super easy quiche aka "refrigerator pie" <3

Hello to whomever is reading this, good afternoon it's 2:08pm here & I just had a delicious slice (or two) :p of a quick and simple recipe that you can basically make at any time of day. Great for breakfast, brunch, lunch, even dinner! QUICHE. :)

I watched an episode of "good eats" by Alton Brown last week and the title of the show was quiche. All kinds and variations of it. &of course how to prepare it. It got me craving a slice, having made quiche only once before for my moms bday brunch back in october. This, along with the fact that Alton Brown mentioned in the show that quiche is frequently called "refrigerator pie" because you can basically add any variation of meats, cheeses, & veggie leftovers you have in the fridge at the time into the quiche.

Today what I had on hand in the fridge was: 1.less than half pound of ground sage pork sausage 2.colby jack cheese, shredded maybe about 1/3c 3.fresh baby spinach 4.green bell pepper,chopped 1/4c 5.Three medium sized button mushrooms, chopped 6.onion, chopped 1/4c 7.pie pan 8. frozen flaky pie crust / FOR THE CUSTARD 1. 4 large eggs 2. 1c whole milk 3.spices (salt, pepper, italian herb & pepper grinder)

Preheat your oven to 350• F. Add your milk, spices, & eggs into a bowl and whisk together to make your custard and set aside. Unroll thawed pie crust into pie pan, & poke holes into bottom of crust with a fork to prevent crust rising or shrinking. Place pie crust into oven and set timer for 10 MIN. (Pre-cooking your crust will help prevent a soggy bottom of your quiche.) Into a non-stick frying pan add ground sage pork sausage over medium heat. Cook about 3 min or just as it begins to brown before adding onion, green bell pepper, &mushrooms. Cook until sausage is brown and vegetables are caramelized, then add about 2 handfuls of baby spinach into the pan and turn of the heat. After 10 minutes of pre baking your crust remove from oven. Add all ingredients from frying pan into crust, distributing evenly. Add cheese evenly over and throughout spinach, veggie mixture. Lastly, pour your custard mixture evenly into pie crust over the sausage, veggies, &cheese. PLACE IN YOUR OVEN & BAKE AT 350•F for 30-45 minutes or until custard is set. :) After awhile check on your crust you may want to cover edges with foil to prevent over browning (which I didn't do lol).

After removing your delicious smelling masterpiece from the oven, let stand for at least 5 min quiche is best served only a little above room temperature. SUPER EASY SIMPLE RECIPE! Try making your own and change it up to your liking or whatever you have on hand. some ideas are your favorite cheeses, broccoli, asparagus, sun dried tomato, ham, diced chicken, whatever at any time of day.
